From Auvergne bladesmith Bryan Raquin, dressed in a bog oak wa handle made years ago for Bryan by artist Anton Kudris, is a long, elegantworkhorse for the kitchen. Standing just 46mm tall at the heel, with a 255mm / 10″ edge that is quite thin but backed by short, meaty, convex bevels and a stiff, wide spine, this one-of-a-kind tool lies somewhere between a workhorse sujihiki, and a versatile, hardworking gyuto. Bryan’s well known combination of XC10 mild steel cladding over 125sc (‘super clean’) high carbon steel forming the house-made san mai blade formula is completed with a dark, forged finish along the flats and belt-finished bevels followed by a polished and whetstone-sharpened edge. Balancing around an inch and a half in front of the rounded choil, the knife is quick and natural in the hand, weighing only 7.1oz / 200g, a contrast to its 15+ inches overall length.
