With all of the refined Dan Bidinger details one expects from any chef’s knife crafted at his Washington studio, this classic, versatile, 242mm / 9.5″gyuto is ready to conquer the kitchen. In A2 high-performance steel, a carbon alloy known for its enhanced corrosion resistance and hardened by Dan to 63 HRC at the edge, the blade is shaped to be a dynamic, do-all chef’s cutting tool. It is stiff and sturdy in the rear for chopping, progressively slimmer toward the needle-like tip for slicing work, slightly flexible in the final inches, and honed with superb, symmetrical convex bevel geometry. Balanced and natural in the hand, the knife’s center of mass falls around an inch in front of the blade’s 54mm-tall heel. A forced-patina etch along the blade’s surfaces brings out the material’s alloy banding and gives the steel a dark, protective finish. This one-of-a-kind culinary tool is operated via a shield-style wa handle sculpted from a dark and striking piece of Hawaiian Koa wood that tapers slightly from back to front.
