The forged, concave portion of the tall, symmetrical bevels provide food release and smooth movement through any ingredient, supported by a tough, convex, yet thin edge or ‘Spicy White’ 26c3 carbon steel. The bright layer of pure nickel contrasting the darkly etched carbon alloys provides a barrier to carbon diffusion during the forging and heat-treatment processes to ensure the proper hardness and refined grain structure at the cutting edge. A full-distal taper along the comfortable, rounded blade spine thins steadily from the brute-de-forge integral bolster to the fine, pointed tip perfect for detail work and precision slices.
