This one-of-a-kind object, availablehere in pre-owned, like-new condition, features a wonderfully honed workhorse blade shaped from 52100 carbon steel with forge-finished flats showing the hammer marks of its hand-hewn origins, and silky, convex, satin bevels above the hard, sharp edge. At 238mm / 9.4″ long with a rigid, sturdy spine and a versatile, forward-weighted profile, the blade is powerful and steady in the hand, designed for the biggest cuts around the kitchen. A balance point around two inches in front of the 52mm tall heel ensures gravity’s assistance with every cut, allowing the chef to save energy while making efficient cuts. The octagonal wa-style handle is sculpted from Bhutanese ‘Chalam’ maple with spacer and bolster of yak horn. Engraved with the Bhutanese Buddhism motif of the Eight Lucky Signs, believed to bring good fortune and prosperity, is a saya of Bhutanese ‘Dung Shing’ pine with a yak horn pin.
