A handmade gyuto by Oregon’s Ben Tendick to become your go-to chef knife for all manner of daily meal prep. Excellent balance and geometry fromheel to tip are the hallmarks that make us want to use this 203mm / 8″ blade in high-performance CPM 154 stainless steel for everything. True to the gyuto moniker, a long, flat edge section extends from the choil forward for several inches for efficient push-pull cutting, while a relatively low and extremely fine tip provides for detail work and precision slices. The spine, like the choil, is rounded and polished, with the spine maintaining full width for strength and rigidity until the final down-sweep to the pointed tip. Below, tall primary bevels slim toward a thin, hard, and sharp edge, with nice convexness just above the secondary bevel (ie. edge). For comfort and control, Ben has dressed this one-off build in ancient bog oak atop red G10 liners, finished off with carbon fiber pins.
