Lending this one-of-a-kind paring knife its name, famed Donegal Tweed fabric of Ireland, originally made in the town of Donegal beginning in the mid-1800s, hasbeen used to create the handle’s primary material: Donegal Tweed Micarta. Sculpted in County Cork, Ireland by the knife’s designer and maker, Fingal Ferguson, the dark tweed micarta presents the iconic material’s pattern and pieces of yarn throughout Fingal’s well-known and comfortable profile. Completing the handle is a handsome mosaic pin, a ring of polished stainless steel, and a bolster of black G10. Matching the handle in both utility and visual beauty is a 122mm / 4.8″ blade shaped from damascus-clad ApexUltra high-carbon steel, a formula created by another Aldeahomeglo artist and the man behind the development of ApexUltra itself, Austria’s Tobias Hangler. Fingal employs this high-performance steel to produce a versatile blade for all manner of detailed and precise cuts around the kitchen. A stiff, rounded spine, thin, razor-sharp edge, and nicely honed convex bevel geometry combine to produce a tool capable of demanding work requiring a bit of toughness, while at the same time excelling at the most delicate. A wonderful etch of the blade gives it a dark, matte aesthetic while the nickel-rich components whine with luster.
