French bladesmith Yanick Puig builds simply elegant gyutos crafted to perform in the hands of professional chefs and home cooks alike. Inspired by the formsand construction methods used by Eastern culinary artists for hundreds of years, Yanick, like those who came before him, forges his own san mai (three layer) steel before shaping it under hammer and fire to produce the 240mm / 9.5″ gyuto seen here. Standing 56mm tall at the heel with a thin, razor-sharp edge, Yanick has forged this blade from his preferred steel combination of135Cr3high-carbon alloy for the edge, known for its minimal additives, and fine grain structure, with vintage wrought iron for the outer cladding. The blade’s spine is rounded and polished and tapers to a fine tip. The handle, in traditional, octagonal profile in hidden-tang “wa” construction, is sculpted from contrasting bocote wood and bog oak.
