The Phantom, at once both light and dark, near yet unknown, perfect while imperfect, is a striking new culinary tool by Dan Tompkins. Almost other-worldlyin its unique beauty, the handle material is, as coined by wood whisperer Rob Harrison, Phantom Wood, a dyed and stabilized mahogany with tone and grain like few we have seen. Capping bands of head-turning orange in the front and rear are sculpted pieces of Carbon Waves glowing carbon fiber, black as night until exposure to UV rays set it ablaze with a Phantom-like blue glow. And these materials with which the knife is dressed, formed to a comfortable, tapering, octagonal wa design for versatility and control, comprise only the handle of an object with much depth to its offering. At 150mm / 5.9″ long with razor-sharp edge, outstanding, convex bevel geometry, and slim, needle-like tip, is the blade, the Phantom’s means of application at the cutting board, forged by hand from a house-made san mai formula that layers a drip-like cladding of vintage wrought iron with its depth of character and inherent imperfections, over the high-performance, structurally, and technically superb CPM 3V core that forms the edge. Strength and durability, high wear resistance, chromium added for easier care and maintenance (ie. rust avoidance), and a simpler, finer, more pure grain structure that similar alloys, make the steel, and therefore the knife, one excellently suited to the rigors of daily use.
