The elegance, grace, and precision present throughout this honyaki gyuto by Australian bladesmith Dmitriy Popov is difficult to put into words. Balancing just so atthe blade’s 49mm tall heel, the versatile profile receives a concave grind from the forge-finished flats downward, slimming to a glass thin cross-section before a sudden transition to convex geometry just above the edge. This approach to compound bevel geometry is nuanced and impeccably honed at the hands of this talented maker (and, talented chef), producing a blade that is thin and nimble, including its extraordinarily fine tip and slim final inch of blade spine, while maintaining rigidity and strength were it’s needed for chopping tasks. To slice, dice, and perform all manner of daily meal prep, the blade is forged by hand from 26c3 ‘Spicy White’ carbon steel, a well-loved, simple, and very clean alloy prized by culinary knife makers. Dmitriy differentially hardens the finished blade, polishing to a high sheen and etching it to reveal the a beautiful, foggy hamon line below dark hammer marks. For comfort and control an octagonal wa handle is sculpted from huon pine and desert ironwood burl.
