Copper and nickel highlight both blade and handle of this extraordinary chef knife hand-made by a new addition to the Aldeahomeglo family, Dan Tompkins ofEvolution Cutlery. At his New York studio Dan has employed the stunning Baker Forge CopperMai steel, a formula that combines copper, nickel, and 1084 in the cladding that jackets a core of 80crv2 carbon steel. But it’s not all sharp looks and premium ingredients: Dan’s geometry and balance are superb as well, this 210mm / 8.3″ gyuto profile delivering a hard, sharp, and thin edge beneath tall, slightly convex bevels with a high-polished finish for cutting performance. A gentle curve allows the knife to rock nicely on the board while a fine, needle-like tip at the end of the blade spine’s full distal taper sits low and perfectly positioned for detail work and precision slices. Balanced just at the front of the handle the blade moves easily and nimbly in the hand, light like a laser with ample strength and lateral stiffness to handle every cut in the kitchen. Matching the blade perfectly is an octagonal wa-style handle of black Richlite, a tough, sustainable, paper-based material with wonderful details, and a series of copper and nickel silver spacers from which we cannot seem to look away.
