Designed as a versatile and balanced kitchen workhorse for every cut in the kitchen is a 210mm / 8.3″ blade forged by hand from a san mai formula that sees homemade nickel and carbon damascus cladding layered over a core of 1.2419 high-carbon steel that forms the cutting edge. Especially thin, hard, and razor sharp, the edge sits below short, convex bevels in a profile that will chop steadily and efficiently, whether rocking on the board or push-pull cutting in the pinch grip. The gyuto-esque curvature and low, especially fine, needle-like tip ensure the edge will slice with precision and perform detail cuts with the best of them. Blade choil and spine are each rounded and smooth for comfort, while the extended tang out of the handle ensures comfort for any hand size and in any grip. Not only is it uniquely handsome in a style guaranteed to turn heads, the handle provides a wonderful, tactile experience as well, with dark Macassar Ebony sanded to the perfect finish and paired with a bolster and butt cap of cast bronze, each joining the ebony with stepped, heirloom fit. The rear of the butt cap protrudes to reveal access to the handle’s hidden retention bolt, allowing the user to remove the handle for cleaning or maintenance. Balancing just at the front of the handle bolster, this one-of-a-kind heirloom chef knife is built for generations of cooks.
