This 225mm / 8.9″ chef knife is a shining example of technical ingenuity marrying with handsome design to produce a high-performance tool that will work as hard in the professional kitchen as on the home cutting board. The striking damascus steel used for the blade not only bares an eye-catching, multi-faceted pattern, it was created by the Hanuljak Brothers from stainless steel alloys only, layering the forge-welded tic-tac-toe motif atop a core of AEB-L stainless blade steel for a thin, hard, razor-sharp edge. The bevels are short and convex in traditional Japanese style, providing both precision and finesse at a very fine edge, with toughness and durability supported by the material above. Balancing just at the blade’s heel the knife is powerful and steady in the hand, allowing its mass and relatively straight edge profile to chop effortlessly. Both blade spine and choil are rounded for comfort in any grip, and the tapering handle bolster, shaped from cast bronze, adds to the ergonomics of this one-of-a-kind object. Beyond the bolster, with a matching, hand-carved and wonderfully tactile surface, is a piece of curly birch wood in which gorgeous grain and color are visible. Tying it all together, both visually and literally, is a cast bronze butt cap that flares out in the center to reveal the accessible retention bolt which mechanically secures handle to blade tang while also allowing for its removal in case care or maintenance are needed.
