At 198mm long by 110mm tall, forged from ball-bearings carbon steel and nickel powder damascus, and shaped with compound ‘S-grind’ bevel geometry, “monumental” is aword that comes to mind in describing this Joseph Schrum culinary creation. At over 1.5″ tall, the slim, hand-filling handle of gorgeous maple burl capped with African Blackwood offers the ultimate degree of comfort and control over a classic Chinese Cleaver-style blade like this one that is designed for precise push-pull cutting. Joseph has done an extraordinary job giving such a large blade a dynamic and versatile feel, the canister damascus steel tapering forward to give the front portion of the edge and primary bevels a much slimmer and more refined cross section than further back where it will excel at chopping even the toughest ingredients. Above the cutting edge, the tall, beautiful compound bevels are shaped symmetrically, first the convex portion which extends upward to around the one inch mark where the grind then reverses to begin the concave portion, giving way finally to the blade’s flats at around an inch down from the spine. Food release, balance, and a powerful feel in the chef’s hand are expected of any knife by this Missouri-based artist, and this larger-than-life vegetable cleaver certainly delivers, with care and attention paid to its every detail.
