Fromculinary artist and bladesmith Andy Billipp, in pre-owned, like-new condition, comes a forged-by-hand chef knife shaped from 52100 carbon tool steel to produce 257mm / 10.1″ of razor sharp edge. Standing 66mm tall at the heel, the powerful and weighted feel in the hand leaves nothing to want. Andy’s ethos dictates that a forged work of metallic art should appear at once both hand-hewn and refined, and his extraordinary abilities deliver just that via a brute-de-forge, sub-integral bolster that transitions from the handle into the blade’s forged-finished flats, along the rounded, tapering spine, and throughout the silky, satin-finished bevels. Each of these stylistic elements is only as good as the utility it delivers to the cutting board, and in Andy’s case, the best of both worlds is realized: pronounced freehand convexity through the bevels to a very thin, very sharp, and hard edge produce food release and cutting performance in a size and profile backed by the versatility of a full-distal spine taper to a paper-thin tip, creating a tool designed as the chef’s workhorse; one blade to do it all. To maneuver the 11.3oz / 322g object with grace and precision, Andy sculpts a handle in his voluptuous Japanese-Western hybrid form from striking, figured sycamore wood capped and pinned with brass.
