Long-time culinary artisan and bladesmith Jackson Rumble of Australia was recently inducted into an elite group of makers, becoming the world’s latest ABS Master Bladesmith. This integral construction, random-pattern damascus gyuto forged by hand at his one-man studio is one of the first chef’s knives to leave his shop since. It is, as you would expect, extraordinary in every way. The stunning, high-contrast damascus flows through the bolster, down the rounded choil, and through 220mm / 8.7″ of blade to a fine, pointed tip. On each face, and with every ever-evolving angle and facet, the pattern is displayed in new and unique ways. Yet it is the knife’s performance on the cutting board that will truly set it apart. Balance and precision are evident throughout, from the versatile, convex bevel geometry that delivers both a thin, razor-sharp edge and tough, workhorse strength to every cut, the full-distal taper along a rounded spine that slims from 3.5mm to 2.1mm at the mid-point to 1.2mm an inch from the tip, to the profile that rocks on the board while providing a low tip for detail work and slicing. Balancing just above the edge’s heel which sits below the bolster and forefinger to offer added control, the knife in the hand is natural, quick, and nimble. Completing the handle alongside the sculpted, octagonal damascus bolster is an heirloom-fit nickel silver ring followed by a beautiful, dark piece of ebony. Visible at the rear is a flush, polished retention bolt cap signifying the simple, internal mechanical apparatus used to secure handle elements to blade.
