This kitchen’s show-stopper is a feathered damascus steel gyuto forged at the hands of bladesmith Joseph Schrum. At his studio in Missouri, Joseph combines CruForgeVand 15n20 carbon steel alloys to form a bold pattern of concentric layers which he then drives a wedge-shaped forging die through to produce the beautiful feathering effect that stretches from the center of the integral forged bolster to the tip of the blade. Etched and polished, the CruForgeV darkens to a near black, while the nickel-rich 15n20 contrasts it with a bright sheen. Fully convex and boasting the superbly honed, versatile geometry he is known for, Joseph delivers a balanced, workhorse blade to the chef’s kitchen with a thin, razor sharp, near-zero edge, pronounced convexity just above it, and a distal taper along the rounded spine that culminates at an especially fine, needle-like tip. Its center of mass lying just at the edge’s 53mm-tall heel, with an overall weight of 9.3oz / 262g, the knife is powerful and steady, moving purposefully in the hand. Outstanding fit-and-finish all around provides a comfortable cutting experience, the sculpted integral bolster, rounded choil, and spine all adding to the rewarding feel. Completing an ergonomic and handsome Western-style handle is a beautiful piece of ancient redgum wood in which Joseph has left the small voids where ancient organisms feasted.
