An heirloom chef knife handmade by Jason Ellard at his studio in Tasmania, this extraordinary piece was forged, as all of Jason’s creations, on the22-year-old’s manual, hand-powered fly press with a degree of exacting precision that will leave one breathless. That is true of not only the forge-welded integral bolster and blade itself, but of the exquisitely intricate twisted W’s pattern multi-bar carbon damascus which forms most of the finished blade as well. Balanced beautifully just at the front of the bolster, the blade moves naturally in the hand, its very thin, sharp, and hard 1084 carbon steel edge finished with a light forced patina where the symmetrical convex bevel geometry culminates. Rigid and strong along the spine, the blade provides a feeling of power and visceral feedback in the hand, designed for chopping in the rear, while the final inches slim steadily as the spine profile drops downward, ending at an especially fine, pointed tip, ideal for all manner of precision slicing and detail work. For comfort and control, behind the mosaic damascus bolster where the complex pattern is on full display, is a recessed, museum-fit spacer of zirconium, and finally, an exhibition-grade piece of Australian Ringed Gidgee.
