In yet another first for this wildly talented and innovative world-class Master Bladesmith, David Lisch of Washington State has delivered his debut forged copper-handled chefknife with removeable wa construction. Carefully and methodically hammered by hand into a traditional octagonal form, solid copper provides comfort and control, extending back from integral bolster to a blackwood pommel where the blade tang’s retention bolt is secured by a gold-covered finial. Carved with a beautiful hand-hewn feel in a shape that can be loosened and tightened with a standard wrench, the gold frames the final moments of the iron retention bold. To chop, slice, dice, and julienne with pleasure and efficiency, David has forged a piece of exceptional-quality W2 high-carbon tool steel which forms the 240mm long by 60mm high blade, first tapering outward from a superbly sculpted handle bolster where the spine drops to 3.3mm, and then onward through a full-distal taper to barely over 1mm an inch from the tip. A foggy, hand-sanded satin finish reveals the differential heat treatments’ silky hamon. And finally, with tall, convex geometry, the blade is ready for action, the thin, hard, and very sharp edge straight in profile toward the heel, and sloping upwards to a low, strong tip. An exquisite piece of culinary art as unique as its maker.
