Forged by hand at his Sydney, Australia studio from stainless-clad V-Toku2 high-carbon san mai steel, James produces a long, upswept edge profile designed for precision slicing, while excelling at any number of other cuts, from julienning to dicing. Just above the zero edge (no secondary bevel is present), a short, pronounced convex portion transitions quickly to a concave section below the forge-finished flats to ensure food release and all-around performance on the cutting board. The sashimi chef will appreciate the heft, length, and refinement at the edge, while the home cook will reach for this blade, in pinch grip especially, to perform nearly every cut in the kitchen with style in heirloom-quality presentation. For comfort and control, sculpted in a beautiful rendition of his well-loved, hand-filling handle design, James selects dark, marbled maple wood, giving it a smooth, polished finish, and securing it with a single, hand-peened copper pin. The handle may be removed using the pin for care and maintenance. A custom maple saya is included.
