The mosaic damascus steel which forms a 248mm / 9.7″ gyuto-inspired blade profile combines a series of progressively drawn out, homemade jellyroll patterned elements along the edge, set into a canvas of dark, 1080 carbon steel, and complemented by a second, mesmerizing pattern of Gabe’s making that graces both the integral handle bolster and the blade’s flats. View the blade’s profile edge-up and you come face to face with the likenesses of what can only be described as metallic clowns eyeing your every cut. Clowns, jellyrolls, and their twists and turns are but the outward appearance of a blade designed for cutting performance through and through. The primary bevel’s high-polished finish and superb convexity to a thin and very sharp edge, combined with the rounded blade spine’s full-distal taper, produce a versatile and dynamic full-size chef’s knife for every cut in the kitchen. Stiff and sturdy in the rear below a 3.6mm wide spine, ample material through the bevels offer strength and toughness for the biggest cuts and densest ingredients. As the spine slims, to 2.6mm at the midpoint and barely 1mm an inch from the tip, toughness is maintained while balancing additional finesse for slicing and detail work, especially as the steel becomes glass-thin at the tip where a touch of lateral flexibility is enjoyed. Straight and flat from the heel forward for much of its length, the edge profile will excel at chopping tasks of all variety, with a sharp up-turn near the tip positioning it well for all manner of slicing work. For comfort and control, beginning with the beautifully faceted integral bolster is a handle completed with slim spacers of black G10 that bookend a piece of marbled carbon fiber, and finally, a sculpted piece of koa sapwood.
