The third knife from artist Jeroen Knippenberg’s inaugural delivery is every bit as extraordinary as the first two, this time featuring a sculpted Western stylehandle in stunning poplar wood that shines with a chatoyance and depth of character we cannot look away from. In his versatile, workhorse profile, the blade of this one-of-a-kind tool is forged by hand from Jeroen’s own house-made carbon damascus in which a dense and intricate pattern is feathered lengthwise to produce the captivating effect witnessed in its finished, etched, and polished from. Without careful and thoughtful shaping for performance, though, the damascus is only a piece of steel. In this case, of the knife’s efficacy, there is no doubt: Jeroen’s compound ‘S-grind’ bevel geometry is superb, playing beautifully in tandem with his faceted blade spine’s full distal taper to produce a versatile, hard-working, and balanced cutting tool. Thin and especially sharp at the edge, the compound stretch of the primary bevels just above marries finesse with toughness, ensuring the densest vegetables and most tender proteins are each treated with the respect they deserve. The concave portion assists with food release and overall balance. Toward the tip the material slims to a needle-like culmination, thin and precise for detailed slicing work. For comfort and control, the handle begins the same as the blade, with feathered damascus forged into a striking, artful shape. With stepped, heirloom fit-up the metallic bolster, in which the material’s visual pattern condenses even further, meets the dyed and stabilized poplar wood. At the handle’s rear face is the cap of the mechanical construction’s retention bolt. A luxurious tool built for the rigors of daily meal prep.
