From artist and traditional bladesmith Emiliano Carrillo comes a gorgeous and very versatile hand-forged petty chef knife in W2 carbon steel. The wonderfully balanced 135mm/ 5.3″ blade features a honyaki finish, the differential hardening, quenched in water, revealing a silky hamon line that runs from the choil just above the heel up and through the superbly shaped convex bevels. Balancing just in front of the handle for nimble, natural, and welcoming feel in the hand, this one-of-a-kind tool delivers a razor-thin, and razor-sharp, edge, and a needle-like tip, for all manner of prep work where a small, yet still 43mm tall blade, is just right. For the handle, Emiliano has shaped a lovely, light colored piece of bird’s eye maple, fitted with a buffalo horn bolster, into an exceedingly comfortable, elegant, octagonal form, rounded at each transition, making this knife incredibly difficult to put down.
