For his latest trick, crafting yet another extraordinary, one-of-a-kind chef knife with unique style as captivating as its utility on the cutting board, this isCascade by Charlie Ellis. At his former studio in the Blue Ridge Mountains of North Carolina, Charlie combined three distinct carbon steel alloys, 1084, 8670, and 15n20 to create a striking, three-tone damascus pattern that seems to cascade over the edges of the integral bolster, down the length of the blade, and out through the tip. As impressive as the damascus itself is the function-first geometry of the tool it forms: Charlie’s compound ‘S-grind’ bevel geometry is well-loved and always meticulous, the concave portion beginning just in from the blade’s choil and then dissipating gently as it nears the tip, all above a superbly shaped convex stretch that culminates at a very thin, very sharp, near-zero edge. The spine of the blade, with its three-faced faceted profile, tapers steadily forward to a fine, pointed tip while maintaining rigidity throughout. Exceptional fit-and-finish describes every element of the knife’s comfortable, head-turning handle: a tapered, hand-forged integral damascus bolster hugs a carved spacer of ‘Dark Matter’ purple-infused carbon fiber with then meets a carved piece of dyed and stabilized box elder burl. Symmetrical fullers, or hollowed-out element along the left and right faces, extends through all three handle elements. On the rear face is a flush ‘Dark Matter’ carbon fiber retention bolt end cap.
