Austrian bladesmith Martin Huber has a way of marrying cutting performance and the technical demands of bladesmithing with style and thoughtful material combinations that makeus look twice each time, and then, look again. The newest one-of-a-kind gyuto from his small studio in Austria’s far north combines a homemade blade formula with versatile and dynamic geometry that position this knife to become the do-all workhorse of any kitchen. At 220mm / 8.6″ long and 58mm tall at the heel, the blade is forged by hand from a recipe that sees O2 carbon steel outer jackets layered atop a coursing vein of 30-layer pure nickel and 02 carbon damascus, with a hard, sharp core of 1.2419 high-carbon steel at the core. The convex primary bevels are superbly honed, providing strength and toughness at the rear for big chopping tasks, while the spine slims steadily from a robust 4.7mm above the heel to just 1.1mm an inch from the tip, and further still to an aggressively shaped, needle-like, razor-thin tip that is ideal for even the most delicate and precise slicing tasks. Balancing a hair in front of the blade’s choil, this knife could not feel more natural and steady in the hand, the nicely rounded spine and choil making it exceedingly comfortable in any grip. For control over this gorgeous tool is a handle as handsome as the blade, sculpted in Martin’s shield-style wa profile from acacia wood, ancient bog oak, black G10, and TruStone, a natural material made from crushed found stone and resin.
