From Philadelphiabladesmith Steve Pellegrino comes a Chinese-style cleaver designed for relentless vegetable chopping and all other cuts as desired by its operator. Forged one hammer strike at a time and then given a silky, hand-sanded satin finish along the bevels, remnants of its hammered origins remain visible along the blade’s flats beneath a comfortably rounded spine. Thin and razor sharp at the 210mm / 8.3″ edge, wonderfully shaped geometry offers subtly compound ‘S-grind’ bevels with a convex portion leading to the final cutting edge for food release and overall performance. Finding an ideal balance between strength and finesse is just what we expect of this talented and experience independent artist. Completing the build is a comfortable, gently sculpted handle of stunning black and white ebony secured with eight flush, stainless pins. A custom saya is included.
