Forged by hand at his studio outside of Weert, The Netherlands, engineer and culinary artist Jeroen Knippenberg creates a stunning petty chef knife from hishomemade, four-alloy carbon damascus steel formula. Feathering the material’s pattern to present its intertwined metallic layers in an organic, flowing form, Jeroen opts for a horizontal full-tang integral bolster construction for the knife; this allows the blade steel’s many details to remain visible from the tip, through the bevels, through the sculpted handle bolster, and finally, throughout the length of the handle between beautiful pieces of desert ironwood. At 165mm / 6.5″ long and 47mm tall at the heel, this is a tool designed and built for a wide range of cuts, and for use anywhere, no matter how large or small the workspace. The blade’s primary bevel geometry is thoughtfully and meticulously honed, beginning at the rear of the edge where the convexity is most pronounced and ample material is present to support the toughest cuts and densest ingredients. Moving forward, both the blade’s spine and the convex geometry below it taper progressively toward the glass thin, needle-like tip, one which will make fast and accurate work of even the most delicate slicing tasks. The reduction in material in the front inches also results in a welcomed touch of lateral flexibility. Steady in the hand with a balance point a hair’s width behind the edge’s heel, this versatile and dynamic kitchen tool moves effortlessly in the hand. Details and subtle touches abound, from the contrasting display of the damascus’ alloys on the top and bottom of the carved bolster compared with those witnessed on the bolster’s sides, to the shaping of the ironwood and the style with which it fits the blade’s horizontal full-tang, to the simple and refined polished steel pins that secure everything in place, nothing is left to want in this one-of-a-kind work of functional art.
