Forged by hand at his studio in Brazil’s south, artist William Porto forges from a single pieceof homemade Four Leaf Clover mosaic damascus steel the 244mm blade, decorative, 24k gold-inlaid bolster, and full handle tang of this extraordinary chef’s gaucho. Inspired by the blade style carried in the belts of South American explorers of centuries past, the profile is perfectly suited to slicing, carving, and serving proteins, as well as any number of cuts around both kitchen and dining room. To display and present to the occasion’s most distinguished guests, no detail in the creation of this one-of-a-kind, contemporary gaucho rendition is overlooked. Superb weight, balance, and geometry produce a tool, first and foremost, of unwavering caliber, the damascus pattern’s intricate and stunning details on display from the elegantly shaped blade choil, along the thick, tough blade spine, and throughout the convex primary bevels from bolster to fine, needle-like tip, and downward to a thin, razor-sharp edge. Where form follows function, tactile, culinary art is the reward: wrap the fingers around a handle styled as remarkably as William’s mastery of damascus design, a grip sculpted from two matched and opposing pieces of fossilized mammoth tooth, secured to the blade’s tang with two hand-peened, 999 fine silver pins, and capped with the elegantly detailed, fluted damascus bolster.
