Don Carlos Andrade’s long-admired kiritsuke profile is back in a one-of-a-kind build that will make any chef look twice. The blade, boasting Don’s pronounced convexgeometry and refined details from tip to heel, is shaped from 52100 high-carbon steel and finished with his silky, satin, hand-sanded polish. The rounded, high-polished spine tapers steadily forward, backing strength and toughness in the rear, and ending at a slim, needle-like, yet durable tip, perfect for all manner of precision slicing and detail work. Polished and rounded, the choil assures comfort in any grip. Just behind the 44mm-tall heel, Don leaves the beautiful rainbow effect of the steel’s tempering where the blade’s tang disappears into the wa-style handle, sculpted as expected into his well-loved and comfortable shield profile. The extraordinary colors and grain of the ironwood are complemented by a carved bolster of glass-silicon laminate, itself displaying distinct grain, and Don’s iconic round inlay of burgundy G10 behind. A single, flush brass pin completes this one-of-a-kind work of culinary art. A custom cloth-covered saya is included.
