From the long, elegant, 267mm blade’s full-distal taper along the rounded spine, to the striking, homemade mosaic damascus steel from which it is hand forged,to the handle’s dual mammoth tooth rings, this Martin Huber chef’s knife is as unique and performance-driven as they come. Designed for the largest, most demanding cuts on down to precise and delicate slices, the blade boasts a very thin, razor-sharp edge beneath medium height, subtly convex bevels that slim steadily forward to an especially slim, needle-like tip. From 3.4mm wide above the choil, the spine measures 2mm at the midpoint, 1mm an inch from the tip, and only 0.65mm one centimeter from the tip before it practically disappears. Stiff and tough in the rear and finely honed in the forward inches, there is little this tool will not accomplish with style and grace. Balancing just over an inch front of the 53mm-tall heel, the knife is steady and natural in the hand with an overall weight of just 7.7oz / 218g. The high-carbon damascus steel that forms the blade is made at Martin’s studio in northern Austria and delights the eyes with an intricate, multi-faceted pattern that repeats, twists, turns, and stretches, providing new details to discover around every corner. Offering comfort and control over the large blade is a handle sculpted from handsome Australian Ringed Gidgee, ancient bog oak, the fossilized mammoth tooth, and black G10, all in Martin’s symmetrical, shield-style, wa handle.
