If you know Nick Rossi’s work, you know that he builds hardworking tools disguised as art, and that goes for this gorgeous 188mm / 7.4″chef knife, recently hand forged at his Maine studio. In a beautifully organic feeling, high-contrast 60-layer carbon damascus steel, the blade is that of a refined workhorse, especially thin at a near-zero edge (only the slightest secondary bevel) below robust, mid-height convex geometry and forge-finished flats, all in a tough, rigid profile built for the biggest cuts on down to the smallest and most detailed. The blade’s rounded spine tapers only slightly until the final inch before reaching the slim, pointed tip, and with a balance point just at the edge’s heel, the knife feels steady and powerful in the hand, while quick and nimble at the same time. It delivers the ultimate size-to-function ratio to become any chef’s go-to tool in kitchens large or small. For comfort, control, and iconic Nick Rossi style, with eye-catching details at every step, is a handle carved from ‘wormy’ stabilized maple in which the natural crevices mined by the materials’ previous inhabitants have been filled and sealed to create a one-of-a-kind aesthetic. The maple wood jackets a frame of black micarta embellished with an inlay of Fordite along the top, secured by two oversized, flush stainless steel pins, and capped in the front by a contoured black micarta ferrule.
