Many knives are easy to pick up. This petty chef by Emiliano Carrillo is hard to put down. Forged by hand from oroshigane carbon steelwhich Emiliano makes in small batches using a homemade furnace at his New Jersey studio, the 150mm / 5.9″ blade is stunning and versatile from tip to heel. Superbly honed, symmetrical convex bevels are polished and etched to reveal the 12 folds of the steel, the differential, water-quenched hardening, and the beautiful, damascus-like alloy banding. Standing 45mm tall at the heel with a rounded spine measuring a full 4.1mm wide out of the handle, the blade is weighted and tough, ideal for all manner of daily meal preparation in a compact profile. The near-zero edge is razor sharp and quite thin, culminating at a needle-like tip positioned perfectly for precision slicing and detailed cuts. A simple D-shaped wa handle for right handed chefs provides comfort and control, sculpted from crepe myrtle wood and capped with a carved bolster of buffalo horn.
