Traditionally shaped to provide a long, straight, gyuto-inspired edge profile that bends upwards only a touch towards a tip that sits low in relation to the handle, this knife will excel at push-pull chopping of ingredients small and large, while slicing with precision using the thin geometry and especially fine tip. Shaped in high-performance A2 carbon tool steel, the convex bevels and blade flats receive a dark, foggy, forced-patina finish that displays the material’s alloy banding beautifully. Well rounded along the blade’s spine and choil, the knife is natural and soft to the touch in the pinch grip.
