This one-of-a-kind gyuto crafted at Isaiah’s studio in Madison, Wisconsin satisfies every desire. It begins with the blade: forged by hand, the 245mm / 9.6″ long edge, bevels, and spine are shaped from Isaiah’s own house-made, 350-layer ladder pattern stainless damascus, a melding of AEB-L and 154 CPM high-performance stainless alloys. Making this material is a feat in and of itself, and Isaiah does it justice by endowing the 51mm tall blade with superb convex bevel geometry, a very thin, razor-sharp edge, a full distal taper along the rounded, polished spine, and a paper-thin, needle-like tip for slicing and detail work. The knife balances approximately 1cm in front of the blade’s heel, the expertly distributed 8.6oz / 244g of overall weight providing a nimble, natural, and solid feel in the hand. Designed to do it all in kitchens large or small, the blade is dynamic and versatile, stiff and sturdy in the rear for the most demanding cuts, with the spine taper and thoughtful geometry allowing for finesse and a slight touch of lateral flexibility in the final inches. But it’s not all business, either; to complement the striking visuals created by the stainless damascus is a handle that can easily stand on its own striking merits: faceted and polished for both comfort and style are front and rear collars of fine silver. Highlighting the silver at each end is a stunning piece of dyed and stabilized curly maple with eye-popping grain and a three dimensional-like chatoyance, sculpted in a traditional, tapering, hexagonal profile. The final touch, finished with incredible care and precision, is a two-tone mother-of-pearl inlay in flower formation set in maple at the rear of the handle’s silver collar. A handmade poplar saya is included.
