This blade means business,standing 67mm tall and stretching 221mm / 8.7″ long in James’ outstanding forged-to-shape gyuto profile with unique, compound geometry to tackle every cut. Bearing the hammer marks of the blade’s forged origins, the flats below a rounded spine give way to the concave portion of the primary bevels that stretch from choil to tip, with the convex portion of the ‘S-grind’ making up only the final quarter inch, or around half a centimeter, slimming downward from there to a near-zero cutting edge. Performance is the sole purpose of these finely honed, purposefully shaped elements which come together to form a blade of which there are few equals. The smoky, hand-sanded finish and transition between sections of the blade are second-to-none as expected of this talented maker who is so well known for his larger-than-life slicing tools crafted for sushi chefs around the world among others. A fine, needle-like tip and blade heel that sits below the front fingers when gripping the knife offer the most versatility and usable edge length possible in a blade of this size. For comfort and control in the simple, handsome shape James’ relies on for his handles is a beautiful, smoky piece of stabilized maple wood secured by a single, removable brass pin. The pin can be removed to care for and maintain the handle. A matching smoky maple saya with brass pin is included.
