In Milan’s classicand versatile gyuto and petty profiles come two complementary blades crafted from the same 135Cr3 carbon san mai with cladding of twisted damascus. The low, convex primary bevels receive a silky, stone polish finished with natural Japanese whetstones as they slim downward to thin, razor-sharp edges. The gyuto, at 210mm / 8.3″ long by 53mm tall, is the tough, durable workhorse, its rounded spine tapering only a touch until the final inches, maintaining strength and rigidity throughout before slimming to a fine tip at the end just as the forge-finished damascus cladding fades away. The taper along the petty’s 127mm / 5″ blade is more pronounced, culminating at an extremely slim, pointed tip, ideal for precision slicing and detail work. The gyuto balances a hair in front of the blade’s heel while the petty’s center of mass is around a finger’s width behind the front of the handle. In his simple, comfortable, and elegant oval wa-handle style, Milan sculpts both from matching snakewood that boasts beautiful colors and grain, finished with a comfortable, smooth polish.
