Designed for shallots, and built to do far more, a new and unique rendition of the Shallot Knife by Don Carlos Andrade of California isfresh off the work bench. Shaped from 52100 carbon steel, this compact, multi-function utility blade can chop, slice, filet, and perform detail work with the best of them, the 140mm / 5.5″ razor-sharp edge honed for cutting performance in professional and home kitchens alike. Don utilizes the pronounced convex geometry he is known for in this blade, pairing it with a rounded, polished spine that tapers steadily to a fine, needle-like tip, to offer both toughness for demanding cuts and dense ingredients, and the precision required for carving and slicing. Don’s silky, satin, hand-sanded finish graces the strong, versatile bevels for a sophisticated aesthetic and friction-free surface. A comfortable, hand-hugging Western handle is carved from vintage Westinghouse canvas micarta, finished with a single hand-hammered stainless steel pin and Don’s signature circular inlay of translucent green G10. This one-of-a-kind tool includes a custom, cloth covered saya.
