Starry Night Petty Chef 125mm

A beautiful creation from Don Carlos Andrade’s studio on the California coast is a petty/utility blade inspired by the famous Vincent Van Gogh painting. StarryNight G-Carta from G.L. Hansen & Sonsforms a dreamyand comfortable handle sculpted for optimal control and styled from hand-laid fabrics in resinto conjure the artwork that is its namesake. Thin and sharp at the edge below convex bevels with Don’s silky, hand-sanded satin finish, the 125mm / 4.9″ blade is compact, tough, and precise, designed for a wide variety of cuts around the kitchen. Just enough knuckle clearance due to the heel’s 34mm height makes rock-chopping possible, perfect for garlic and chives, while the profile and pointed tip are great for tasks from slicing citrus to carving proteins. The high-performance, easy-to-care-for RWL 34 stainless steel is made in small batches in Sweden by specialty steel maker Damasteel and the blade features a polished, rounded, choil and spine for added comfort. Three domed, hand-hammered steel pins secure the Starry Night G-Carta to complete the knife’s full-tang construction. A wonderful daily-use knife built to pass down to future generations.
