Artist, sculptor, chef, and bladesmith Don Carlos Andrade has long been known for his unique approach to designing versatile, function-first culinary knives that surprise anddelight in their innovative forms. This family of four Garlic Knives, specially crafted for the 2024 Holiday Season, do just that. Forged by hand from 26c3 ‘Spicy White’ high-carbon steel, each is dressed with a different vintage micarta, including one in blue, red, oatmeal, and bleached linen. As is customary in his larger blades, Don imparts these four knives with the same pronounced, performance-driven convex bevel geometry he is known for. With garlic, as well as shallots, ginger, and any number of other small ingredients in mind, this handy little tool will perform a variety of cutting tasks around the kitchen, and always with personality. For precision slices on the cutting board, or handheld peeling and carving above the board, a compact knife like this will always play an integral role in daily meal preparation. The 70mm / 3″ blade receives Don’s iconic differential heat treatment, revealed through his thoughtful etching and polishing process that produces the foggy, two-tone finish witnessed here. Contrasting the blade bevels and rounded spine is the high-polished and rounded choil that offers comfort no matter how the knife is gripped. Secured by three flush, polished brass pins, each knife’s micarta, two pieces of which jacket the blade’s full-length tang, are sculpted for a rewarding and ergonomic tactile experience.
